This is a very interesting dish (in my opinion). It was recommended by our Chinese friend living in Estonia. It is originally a Sichuan dish. And this photo is by Elaine who lives in China now and grew up in Sichuan province. During her early childhood; she had two great cooks around: her mother and her grandmother. Grown up, she travelled around China and she enjoyed the yummy dishes from many different cuisines.  You can find the step by step photos and instructions on how to prepare this dish. Our Italian friend Lorenzo and my husband also like this dish.

Ingredients:
Chicken drumsticks 2
Shallot 1 small pc
Ginger slices 3-4 slices
Pepper 1 small sprinkle

Seasoning:
Shallot 1 pc
Ginger 2 slices
Garlic 2 cloves
Coriander 1 bunch
Millet pepper 2 pcs

Peppercorns 1 tablespoon

Chili oil 1 tablespoon

Sesame sesame oil 1 tsp

Fresh soy sauce 1-2 tablespoons

Balsamic vinegar 1 tablespoon

Cooking wine 1 tablespoon

White sugar 1 tsp

a little salt

Decoration:
Cooked white sesame seeds
Cooked peanuts
(Seasoning is for reference only) Please adjust according to your taste

So I chanced upon this mukbang vlogger today, because I was actually looking for dark chocolate reviews. I found her because she was doing one review vlog about the Lindt Balls, with all the possible flavours in the lindor truffle balls. She simply didn't like mint with chocolate, no fruits, no alcohol types of taste, because those tasted 'fake'. I think she has a biased to MILK CHOCOLATE or caramel flavors. Lately I am in a craze for Dark Chocolate. Besides looking for the different brands that are available in the city, I am learning how it can be handmade. One of the techniques is using cocoa powder (I've shared it in this video recipe!) My gosh, this movie night snack looks so yummy, I really want to give it a try to make it one of these days! Nut Butter Truffles and arrange them on a snack platter with fresh fruit, carrot sticks, dark chocolate, nuts and a little peanut butter cinnamon dip. It's so good and perfect for a movie night with friends or family.

Nut Butter Balls15 soft dates, pitted
2 tbsp coconut oil
2 tbsp peanut butter
50 g / 1/2 cup rolled oats
3 tbsp desiccated coconut
3 tbsp cacao powder
1 pinch sea salt
For rolling
4 tbsp finely chopped hazelnuts or desiccated coconut

Lately, I am into Extra Dark Chocolate of up to 70% Cocoa solids. So I started with the city we live in now, I found this Estonian branded chocolate called 'Bitter' Kalev.

Cocoa mass, fat-reduced cocoa powder, sugar, cocoa butter, butter fat (milk), emulsifier (lecithin), vanillin. Cocoa solids: 70% minimum. May contain traces of nuts, peanuts, cereals containing gluten and egg products.

They wrote that "the high cocoa content Bitter 70% represents the best qualities of dark chocolate and is loved by everyone who prefers less sweet and slightly bitter chocolate." Before this, I actually tried the 87% on my first trial of dark chocolate. It was too bitter, but I find this 70% ones more tasty and I recommend (in fact!)



I've also learned along the way that there is a process called alkalization, also known as Dutching, has negative effects on the antioxidants in dark chocolate. So do read the labels. Do you know of any dark chocolate from your country that is a good brand? Which would you recommend

All our fall foliage is gone, so I decided to have a lazy weekend at home. My camera only came out of its bag to take photos of food. (and I cooked a lot this weekend!) On Sunday morning, I made a big pot of lentil and sausage soup and a pan of sweet cornbread. It will be my lunch for most of the week. I've heard it said that no self-respecting Southerner puts sugar in their cornbread. There must be some truth to that, because I actually grew up hating cornbread because I thought it always tasted gritty, dry, bland and crumbly. Then, about ten years ago I had cornbread at a restaurant in Maine. It totally changed my mind about cornbread. Now, I love it... but it has to be sweet, moist and almost cake-like. Both of these dishes followed new recipes, and both were excellent!

This is the Pizza I made today for my husband. He rated it well, very well actually. So this is my very own recipe, hope you enjoy it too:

First make the pasta base :)

Ingredients: Flour, Yeast, Water, Olive Oil, Honey, Salt.

Add 5g of yeast to one teaspoon of honey, add 3 tablespoon of warm water, mix it and let it react for 10mins.

When mixture becomes fluffy, you can add 500g of flour, pinch of salt and mix them well.

When it become crumbly add water and knead it for 20mins, until it becomes the dough.

Let it rest for 30mins and punch down the puff up pasta and divide it into two parts.

Roll it down to two doughs (one for each pasta base).

Add oil and let it rest for another hour.

Flatten it with your palm or roll it to the thickness you like, adding some flour every now and then so it won't stick to your hands.

For the pasta sauce :)

Ingredients: Onions, Tomatoes puree, oregano, salt.

With two large onions, diced them and fry in olive oil til translucent.

Add one can of Pomodoro sauce (Italian tomatoes are longish types, very juicy and delicious) :)

Add half a cup of water and simmer til the fragrant of the pizza sauce fills your entire kitchen :)

Add fresh oregano and salt. Let it cool down before adding to the pizza base.

Add toppings: in this pizza photo above, Hungarian Kolbasz (Smoked sausage), Trappista cheese, cherry tomatoes and some minced garlic are added. You can top it with whatever you prefer.

There were some ham slices in this one too ;)

Bake it for 8 mins at 200 deg Celsius, when ready top it with Rucola. And enjoy!

Do you like Strawberries? I really love it! As far as I know, strawberries are very healthy, though it has some natural sugars. It is an excellent source of Vitamins C and Vitamin K. I like that it has fibre, folic acid, manganese, potassium, significant amounts of phytomutrients and flavanoids.

It can help with digestive ailments, teeth whitening, skin irritations, helps to regulate blood sugar levels by slowing digestion! That's how its fructose content helps. It has useful leaves that can be used to make tea or eaten raw/cooked. The fibre also has a satiating effect. It has a rich colourful pigments that is a protective effect (anthocyanidins) and potential health benefits (like prevention of inflammatory conditions and heart disease)!

This is the second episode in our new mini series where we travel around Sweden, explore local ingredients and traditions and cook with friends. A few weeks ago we were out in Tullinge forest learning about new (to us) edible mushrooms that we cooked over open fire together with our friend and professional forager Niki Sjölund: http://instagram.com/neonatur. We learned that mushrooms often grow around trees and under the moss. And that there are a lot more edible varieties out there than just chanterelles and porcini mushrooms. Not only did we cook with the mushrooms we found, but also with some wild forest herbs that Niki found. It might be an old cliché but outdoor cooking truly is the best. Although next time, I think we will bring spoons and bowls :)

The true story of this Chocolate Cake was actually from 2 mistakes. One by me and one by my husband. As you know, I received a food processor as a Christmas present last year. And one of the feature that I want to try very much was homemade mayonnaise condiment.

The chance arrived after New Year's Eve of 2019. We ran out of Mayonnaise, so with 2 egg yolks at room temperature, I decided to use the whipping disc and made the first batch of homemade mayo.

I didn't expect, the whipping process was actually very efficient. Just I added English Mustard sauce (instead of Dijon Mustard) and I've added Apple Cider as well as Lemon Juice! (A tat too much I think!)

The outcome was a very creamy mayonnaise that is (in my honest opinion) too much acidic taste?!

We didn't need to toss them, quite a lot with 2 egg yolks actually, so I decided to turn it into the main ingredient in this Chocolate Cake. Mayonnaise works perfectly for a Chocolate Cake because it really brings out the Chocolatey flavors! What mayonnaise actually IS, is an emulsion of oil, vinegar and egg yolk. Sometimes added with buttermilk for Double Chocolate Cupcakes. It is simply a shortcut to baking a delicious cake.

How to Make Chocolate Mayonnaise Cake:
This cake is so simple to make! It is so tender and fluffy and soft and will become your new go-to dessert.

Mix all the dry ingredients together: flour, granulated sugar, cocoa powder, and baking soda. Next, you’ll add in the mayonnaise, water, and vanilla and beat until smooth.

Pour the batter into a circular greased baking pan and bake for 30 minutes or until toothpick comes out clean.

I've just told you the first mistake. The second mistake was, while I was googling the recipe (which was like a couple of minutes), my husband accidentally added some water to the egg whites that I was planning to use for the cake!!!
(actually it was quite frustrating because he meant well to help to wash the dishes after lunch) Instead, I need to find a recipe that can include egg whites with water for making this chocolate cake!

But well, fortunately, the cake amazingly turned out very well, following is my recipe:

Ingredients
CAKE:
  • 2 cups (256g) all-purpose flour
  • 1 cup (200g) granulated sugar
  • 6 tablespoons (44g) cocoa powder
  • 2 teaspoons baking soda
  • 1 cup (237g) water
  • 1 cup (232g) mayonnaise
  • 1 teaspoon vanilla extract

OPTIONAL FUDGE SAUCE:
  • 3/4 cup (179g) heavy cream
  • 1 cup semi-sweet chocolate chips 6 ounces
  • toasted walnuts optional
  • vanilla ice cream optional

Instructions
CAKE
  1. Preheat oven to 180°C. Grease a circular baking pan. Add baking paper for a mess-free cake ;)
  2. Whip the egg whites and water.
  3. Whisk the flour, sugar, cocoa powder, and baking soda together in medium mixing bowl. Add the mayonnaise, and vanilla and mix until evenly combined. 
  4. Pour batter into the prepared baking pan. Bake for 25-30 minutes or until toothpick comes out mostly clean.

OPTIONAL FUDGE SAUCE:
  1. Place chocolate chips in a bowl. Heat whipping cream, pour over chocolate chips, and cover. Let sit for 5 minutes and then whisk until smooth.
  2. Serve cake warm or reheat. Spoon fudge sauce on top of cake, sprinkle with walnuts, top with ice cream. Serve immediately.
