White Chocolate Pie at Interactive Tables (IT) Resto T1 Mall — in Tallinn, Estonia.

This was the first time we try the food at Interactive Tables (IT) Resto at the T1 Mall. There are quite a number of seats (like 80-120 pax). It's quite fun as you can explore using the smart table technology from placing your order, to drawing, playing air hockey, chess, memory game etc. T1 Mall is the newest mall which boasts to be the next-generation shopping centre. It aims to let shoppers a new way of thinking and a new dimension (new emotions/experiences). It wasn't so ready yet as only this week the new rooftop Ferris wheel has been erected and gondolas being installed. Ülemiste subdistrict is quite a busy area in the weekends especially. They are still installing and testing the wheel's electric and lighting systems. By the way, this portion of pie is 4.50 EUR, on a steep side $$$ but I am sure a lot of Scandinavian (Sweds, Finns, Danish) would find this pricing manageable.

Crispy fried chicken is a standard dish in the Cantonese cuisine of southern China and Hong Kong.
The chicken is fried in such a way that the skin is extremely crunchy, but the white meat is relatively soft. This is done by first poaching the chicken in water with spices (e.g. star anise, cinnamon, nutmeg, Sichuan pepper, ginger, fennel, and scallions), drying it, coating with a syrup of vinegar and sugar, letting it dry thoroughly (which helps make the skin crispy) and deep frying. The dish often served with two side dishes, a pepper salt (椒鹽) and prawn crackers (蝦片). The pepper salt, coloured dark white to grey, is dry-fried separately in a wok. It is made of salt and Sichuan pepper. Traditionally this dish is eaten at night. It is also one of the traditional chicken dishes used in Chinese weddings and other Asian weddings.

Crispy Chicken Ingredients:
1 whole chicken or spring chicken
2 pieces green onion
1 small piece ginger
Some Sichuan peppercorn

1 tablespoon salt
1 teaspoon regular soy sauce
1 tablespoon Sichuan peppercorn powder
1 teaspoon salt

or

cumin powder 1 teaspoon
chili powder 1 teaspoon
salt 1 teaspoon


脆皮鸡 crispy chicken 的做法
三黄鸡 或者童子鸡一只 葱两根 生姜一小块 花椒一汤勺
盐一茶勺 酱油(生抽)一汤勺
调味料: 花椒粉,盐
或者 孜然粉,辣椒粉和盐

Entrecote is a French word for a beef steak that was cut from between the ribs. It's a very thin boneless ribeye. Indeed, some places will call an ordinary boneless ribeye an entrecote, probably because it sounds fancy. This is my first time choosing beef steak to cook in my own kitchen. I never knew how to choose the correct cut. I picked up three beef steaks, two Sirloin steak and one entrecote. My husband loves steaks! And he chose mashed potatoes as the side. What do you like as sides of a meat dish?

The first time I roasted a chicken was based on a recipe from my Hungarian mother-in-law. She has a traditional way of roasting the chicken. Looking back to the process, it is rather simple.  My favourite roasted chicken was from the mobile vendor in Budapest, right next to the DVD rental store where we used to frequent. (Gosh, that was already some years ago since nowadays people don't rent DVDs anymore!) Anyway, the following is a recipe by Yummychunklet and she wrote it was adapted from Better Homes and Gardens.
INGREDIENTS
1 3.5 to 4-lb. chicken
2 tbsp. butter, melted
1/2 tsp. each salt and black pepper
3/4 c. honey
2 tbsp. fresh tarragon, chopped
1 c. peeled and sliced shallots
1 c. champagne
1/2 c. chicken broth
1&1/2 c. frozen peas
1 small lemon, thinly sliced (optional)
INSTRUCTIONS
1. Preheat oven to 375 degrees. Rinse chicken cavity; pat dry with paper towels. Tie legs together with kitchen string or a strip of cheesecloth. Place in shallow roasting pan. Brush with melted butter; sprinkle with salt and pepper. Roast uncovered for 1 hour 15 minutes to 1 hour 45 minutes until chicken is no longer pink (180 degrees internal temperature).
2. Brush chicken with half the honey and half the tarragon, and roast for an additional five minutes until honey forms a golden brown glaze.
3. Remove chicken from pan and tent with foil. Transfer pan drippings into large saucepan on stove top. Add shallots, champagne, broth, and remaining honey. Simmer, uncovered, for 10 to 15 minutes until sauce is thickened and shallots are tender. Add frozen peas and lemon slices (if using), and simmer an additional five minutes.
4. To serve, slice chicken into pieces, ladle slices with sauce, and sprinkle with remaining tarragon.

In Transylvania, we stayed for a few days in Băile Tuşnad (Tusnádfürdő) which is a town in Harghita County, Romania. There are many Hungarians living in the Székely Land, an ethno-cultural region in eastern Transylvania. The owner of the accommodation recommended us to an authentic Székely restaurant which serves the best beef stew I've ever tasted. Székely Marhapörkölt includes pork knuckle simply tastes delicious. It is the aromatic addition and the tenderness of the beef just makes it so delectable! Besides, the sour cream that topped the dish was so creamy and just makes it tasted so good.


Following is a video recipe for the Székely Marhapörkölt as well as the galuska or nokedli as we called it here in Hungary.







Z&Z's Road Trip to Transylvania

These are breadrolls shaped like hedgehogs. They are so adorable looking, and we certainly had a little feelings of 'can't bear to eat them'. Inside these are fillings with Cream Cheese. 

Ingredients:

3 cups of flour
1/2 tsp baking powder
10g of fresh yeast
1/4 cup warm water
2 tablespoons sugar
50g Cream Cheese
50g butter
1 tsp salt
1 egg
Black Sesame seeds (for the eyes)

Instructions:

  1. Activate the yeast by combining warm water with fresh yeast and sugar. Wait for 20 minutes til bubbles foamy appears.
  2. Add that to the flour, baking powder, salt and egg. Mix it til smooth dough is formed.
  3. Let dough rest for 30 minutes in a covered warm bowl.
  4. Punch down to let air escape and smooth it into a ball of dough of size like before.
  5. Divide into two parts, and add to one part your food coloring (in this case I added yellow), the other part is the original color. 
  6. Divide each part into 5 equal smaller parts
  7. Roll each small dough into a flat disc of about 1cm thick. Add a teaspoon of Cream Cheese in the center, and fold inwards. Tuck in the ends and that side down on the tray with parchment paper.
  8. Repeat on all remaining smaller parts.
  9. Let them rest for about 45minutes to one hour.
  10. Use the scissors to snip each dough like 'hedgehog needle-like' spikes.
  11. With a toothpick, add two holes, add 2 sesame seeds as its eyes. 
  12. Add one additional hole with a foodpick (as its mouth)
  13. Bake in the oven at 190 deg C for 15 minutes.
