Vegetable Curry (Nonya)

 Here is a recipe for a flavourful vegetable curry:


  • 1 onion, chopped
  • 3 cloves of garlic, minced
  • 1 tablespoon of ginger, minced
  • 2 tablespoons of vegetable oil
  • 2 tablespoons of curry powder
  • 1 teaspoon of ground cumin
  • 1 teaspoon of ground coriander
  • 1/2 teaspoon of turmeric
  • 1 can of diced tomatoes
  • 2 cups of mixed vegetables (such as carrots, potatoes, bell peppers, and peas)
  • 1 cup of coconut milk
  • Salt and pepper, to taste
  • Fresh cilantro, for garnish (optional)


  1. Heat the oil in a large saucepan over medium heat.
  2. Add the onion, garlic, and ginger and cook until the onion is soft and translucent, about 5 minutes.
  3. Stir in the curry powder, cumin, coriander, and turmeric and cook for another 2 minutes.
  4. Add the diced tomatoes and cook for 5 minutes, until the sauce has thickened.
  5. Add the mixed vegetables and continue to cook for 5 minutes, until the vegetables have started to soften.
  6. Pour in the coconut milk and bring the mixture to a simmer.
  7. Reduce the heat and let the curry cook for another 10 minutes, or until the vegetables are tender.
  8. Season with salt and pepper to taste.
  9. Serve the curry over rice, garnished with fresh cilantro, if desired.
